Gianfranco Pascucci, born in 1970, is one of the greatest interpreters of Italian seafood cuisine. As a young man, he worked in tourist resorts around Italy and it was at one of these where he met Vanessa Melis, his future wife. In 2000, Gianfranco and Vanessa decided to open a restaurant and took over the one his grandfather had run in the 1950s, creating Pascucci Al Porticciolo. With Gianfranco in the kitchen and Vanessa in the dining room, Pascucci Al Porticciolo quickly became the top restaurant on the Roman coast, gaining a popular following and plaudits in important official guides. In 2012, he earned a Michelin star and in 2016 he was given the Tre Forchette award by the Gambero Rosso guide, which he won again in 2017 and 2018. In 2017 he received the award for best seafood cuisine from the Espresso magazine’s “Ristoranti d’Italia” guide and, in 2018, he was awarded the “Tre Cappelli”, also by the Espresso magazine. For about 10 years he has been one of the main faces of the television programme “La Prova del Cuoco”, broadcast on Rai 1, and since 2017 he has been the star and author of the television programme “Com’è Profondo Il Mare”, broadcast on the Gambero Rosso Channel. Also in 2017, Gambero Rosso published a book also with the title “Com’è Profondo Il Mare”, which talks about Gianfranco Pascucci’s cuisine in a very original way. Gianfranco is self-taught, with a keen interest and profound knowledge of the sea. He has a manic obsession with raw materials, which he selects on the basis of principles of sustainability, ethics and respect for seasonality. His cuisine, based on ongoing research and a constantly evolving technique, speaks of the sea. It is an elegant and contemporary cuisine that draws inspiration from influences around the world, but without neglecting the strong ties with the sea and the surrounding area.
