Alessandro was born in Ancona in 1987. His first internship in a kitchen was with Roberto Fiorinicheg at Il Saraghino in Numana. After graduating, he started work at the Hotel La Cantina in Palazzo Bello in Recanati where, under the chef’s direction, he gained his first and most important experience in a two-Michelin-starred restaurant: Le Moulin de Mougins, in the kitchen of Roger Verge. Here he learnt to work with a large team and to use noble ingredients.
Back in Italy, he sought out Mauro Uliassi and began a 6-month internship in his two-Michelin-starred restaurant in Senigallia. He then gained his first experience as a chef at the Hotel Gallery in Recanati, where he began to develop his own cuisine based on what he had learnt so far. In 2012, he approached the chef Piergiorgio Parini of Il Povero diavolo restaurant in Torriana, where he spent more than a year as a chef specialising in first courses.
In 2014, he returned to the Marche region to join Chalet Galileo in Civitanova Marche, where for 12 months he worked with great catch that arrived every day from the fish auction.
He then moved to Alba in Piedmont for a 6-month internship at Enrico Crippa’s Piazza Duomo restaurant, which had 3 Michelin Stars. Here he learned more about the secrets of vegetables, following the chef in his own garden. In 2016, back in the Marche, he won the San Pellegrino Young Chef award for Italy and, subsequently, the Acqua Panna Contemporary & Tradition Award in the world final, for the best reinterpretation of a traditional dish, the “risotto alla marinara”.
In 2017 he won the LSDM Contest for “tomato in haute cuisine” and was re-nominated for the Italian final of the San Pellegrino Young Chef 2018, which he went on to win again.
Shortly afterwards he worked around the world (Japan, New York and Washington) but decided that the time had come to start his own business and open a restaurant of his own: “Casa Rapisarda” in Numana (An). Alessandro Rapisarda will star in Summer Dinners with Chef Pasquale Palamaro on July 13th.
